Scaling isn't always perfectly linear
Most ingredients scale in direct proportion to the multiplier — double the recipe, double every ingredient. But a few categories don't scale cleanly, and it's worth knowing which before you blindly multiply everything. Leavening agents (baking soda, baking powder, yeast) often need slightly less than a straight multiplication at large scale-ups — doubling a cake recipe usually works fine with exactly double baking powder, but tripling or quadrupling can sometimes over-leaven, giving a coarser texture; many bakers reduce leavening by about 10-15% at very large scale-ups.
