Why surface area, not just "size," is what matters

A recipe's ingredient quantities are calibrated to fill a specific pan to a specific depth — swap to a differently-shaped or sized pan, and what actually matters is how much surface area you're now filling, not the pan's nominal size label. A 9-inch round pan and a 9-inch square pan sound similar but aren't: the round pan has an area of about 64 square inches (π × 4.5²), while the square pan has 81 square inches — the square pan is genuinely about 27% bigger, meaning the same batter would spread thinner and likely need a slightly shorter bake time in the square pan.

What to do with the scale factor once you have it

Multiply every ingredient by the scale factor shown, the same way our recipe scaling calculator works. For baking time: a scale factor above 1 (bigger pan, thinner batter) generally means checking for doneness earlier than the original recipe states; a scale factor below 1 (smaller pan, thicker batter) generally means it'll need longer — start checking about 15-20% earlier or later than the original time and use a toothpick test rather than trusting the clock alone, since pan material and oven variation both affect this too.

FAQ

Does pan depth matter too, not just the base area? Yes, for tall bakes especially (bundt cakes, layer cakes) — this calculator handles the base-area math, but very differently-shaped pans (like a bundt vs. a sheet pan) may need more judgment than area alone captures.

What about oven temperature — does that change too? Generally keep the same temperature; it's bake time that adjusts with pan size, not temperature, for most standard cakes and bars.
