Why stuffed turkeys need noticeably longer
Stuffing inside the cavity insulates the center of the bird, slowing how quickly heat reaches the deepest part of the thigh meat — and critically, the stuffing itself also needs to reach a safe 165°F, which takes longer than the surrounding meat alone would. This is why published roasting charts consistently show 20-30 extra minutes for stuffed birds at the same weight, and why many food-safety guides now recommend cooking stuffing separately in its own dish rather than inside the turkey — it's faster, more evenly cooked, and removes the risk of stuffing lagging behind the meat's temperature.
Why time brackets, not a per-pound formula
Unlike a simple roast, turkey roasting time doesn't scale in a straight line with weight — larger birds have a better volume-to-surface-area ratio, so the per-pound rate actually decreases somewhat as the bird gets bigger.
